  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup key lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. In a large mixing bowl, beat cream cheese until smooth.
  5. Add 1 cup sugar and mix until well combined.
  6. Incorporate eggs one at a time, mixing well after each addition.
  7. Add key lime juice, lime zest, and vanilla extract. Mix until smooth.
  8. Pour the cheesecake batter over the crust.
  9. Bake for 60 minutes or until the center is set.
  10. Turn off the oven and leave the cheesecake inside for 1 hour.
  11. Remove from oven and cool to room temperature.
  12. Chill in the refrigerator for at least 4 hours before serving.
