- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 4 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup key lime juice
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (160°C).
- Combine graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl.
- Press the mixture into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat cream cheese until smooth.
- Add 1 cup sugar and mix until well combined.
- Incorporate eggs one at a time, mixing well after each addition.
- Add key lime juice, lime zest, and vanilla extract. Mix until smooth.
- Pour the cheesecake batter over the crust.
- Bake for 60 minutes or until the center is set.
- Turn off the oven and leave the cheesecake inside for 1 hour.
- Remove from oven and cool to room temperature.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- For a twist, add a layer of raspberry puree on top before serving.
- Garnish with lime slices or whipped cream for presentation.
- Ensure ingredients are at room temperature for better mixing.
