Description

A creamy and tangy dessert made with key limes and coconut.


Ingredients

  • 1 cup coconut milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 teaspoons gelatin powder
  • 1/4 cup key lime juice
  • Zest of 1 key lime
  • Pinch of salt

Instructions

  1. In a saucepan, combine coconut milk, heavy cream, and sugar. Heat over medium heat until sugar dissolves.
  2. Sprinkle gelatin over the mixture and stir until dissolved.
  3. Remove from heat and stir in key lime juice, zest, and salt.
  4. Pour the mixture into serving cups.
  5. Refrigerate for at least 4 hours or until set.
