Ingredients

- 1 cup coconut milk
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 2 teaspoons gelatin powder
- 1/4 cup key lime juice
- Zest of 1 key lime
- Pinch of salt
Instructions
- In a saucepan, combine coconut milk, heavy cream, and sugar. Heat over medium heat until sugar dissolves.
- Sprinkle gelatin over the mixture and stir until dissolved.
- Remove from heat and stir in key lime juice, zest, and salt.
- Pour the mixture into serving cups.
- Refrigerate for at least 4 hours or until set.
Notes
- Serve chilled.
- Garnish with whipped cream or lime slices if desired.
