Delicious key lime pie bars with a creamy filling and a crunchy crust.
Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup unsalted butter, melted
- 4 large egg yolks
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup fresh key lime juice
- 1 tablespoon lime zest
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom of a greased 9×9 inch baking dish.
- Bake for 10 minutes, then remove from the oven.
- In another bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, lime zest, and salt.
- Pour the filling over the baked crust.
- Bake for an additional 15 minutes.
- Allow to cool, then refrigerate for at least 2 hours before serving.
- Cut into bars and serve chilled.
Notes
- Use fresh key limes for the best flavor.
- Store leftovers in the refrigerator.
- Can be topped with whipped cream if desired.
