Ingredients

- 1 cup white chocolate chips
- 1/4 cup heavy cream
- 1/4 cup fresh key lime juice
- 1 tablespoon key lime zest
- 1/2 cup graham cracker crumbs
Instructions
- In a saucepan, heat the heavy cream over medium heat until it starts to simmer.
- Remove from heat and add white chocolate chips. Stir until smooth.
- Add key lime juice and zest. Mix well.
- Chill the mixture in the refrigerator for 1 hour.
- Once chilled, scoop out small portions and roll them into balls.
- Roll each ball in graham cracker crumbs.
- Place truffles on a baking sheet and chill for 30 minutes.
- Serve chilled.

- Use fresh key limes for the best flavor.
- Store truffles in the refrigerator.
- For a sweeter taste, add more chocolate.
