Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup green onion, chopped
  • 1/4 cup soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp brown sugar
  • 1 tbsp garlic, minced
  • 1 tbsp ginger, minced
  • 1 tsp black pepper
  • 8 small tortillas
  • 1 cup kimchi, for topping
  • 1/2 cup cilantro, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix ground beef, breadcrumbs, green onion, soy sauce, sesame oil, brown sugar, garlic, ginger, and black pepper.
  3. Form the mixture into meatballs, about 1 inch in diameter.
  4. Place meatballs on a baking sheet and bake for 20 minutes.
  5. Warm tortillas in a skillet or microwave.
  6. Assemble tacos by placing meatballs on tortillas.
  7. Top with kimchi and cilantro.
  8. Serve immediately.
