Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup green onion, chopped
- 1/4 cup soy sauce
- 2 tbsp sesame oil
- 2 tbsp brown sugar
- 1 tbsp garlic, minced
- 1 tbsp ginger, minced
- 1 tsp black pepper
- 8 small tortillas
- 1 cup kimchi, for topping
- 1/2 cup cilantro, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix ground beef, breadcrumbs, green onion, soy sauce, sesame oil, brown sugar, garlic, ginger, and black pepper.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place meatballs on a baking sheet and bake for 20 minutes.
- Warm tortillas in a skillet or microwave.
- Assemble tacos by placing meatballs on tortillas.
- Top with kimchi and cilantro.
- Serve immediately.
Notes
- Adjust the spice level by adding chili paste if desired.
- Use ground pork or chicken for variation.
