Ingredients

- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup chopped nuts (walnuts or almonds)
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/4 cup honey
- 1/2 teaspoon vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix oats, flour, coconut, nuts, brown sugar, and granulated sugar.
- Add melted butter, honey, and vanilla extract to the dry ingredients and stir until combined.
- Drop teaspoon-sized mounds of dough onto a parchment-lined baking sheet, spacing them apart.
- Bake for 10-12 minutes or until edges are golden brown.
- Remove from the oven and let cool completely.
- Melt chocolate chips in a microwave or double boiler.
- Dip the cooled cookies in chocolate or drizzle chocolate on top.
- Allow chocolate to set before serving.
Notes
- Store cookies in an airtight container.
- Use parchment paper to prevent sticking.
