Ingredients

  • 1 cup breadcrumbs
  • 2 eggs
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup butter
  • Juice of 1 lemon
  • 2 cups potatoes, peeled and cubed
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 200°F (93°C) to keep schnitzels warm.
  2. Boil the potatoes in salted water until tender.
  3. In a bowl, beat the eggs. In another bowl, place the flour, and in a third bowl, the breadcrumbs.
  4. Season the lamb cutlets with salt and pepper. Dredge each cutlet in flour, then dip in eggs, and finally coat with breadcrumbs.
  5. Heat olive oil in a skillet over medium heat. Fry the schnitzels until golden brown on both sides. Transfer to the oven to keep warm.
  6. Drain the potatoes and mash them with butter, milk, and lemon juice until smooth.
  7. Serve the schnitzel with the lemon butter mashed potatoes.
