- 4 lamb cutlets
- 1 cup breadcrumbs
- 2 eggs
- 1/2 cup all-purpose flour
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup butter
- Juice of 1 lemon
- 2 cups potatoes, peeled and cubed
- 1/4 cup milk
Instructions
- Preheat your oven to 200°F (93°C) to keep schnitzels warm.
- Boil the potatoes in salted water until tender.
- In a bowl, beat the eggs. In another bowl, place the flour, and in a third bowl, the breadcrumbs.
- Season the lamb cutlets with salt and pepper. Dredge each cutlet in flour, then dip in eggs, and finally coat with breadcrumbs.
- Heat olive oil in a skillet over medium heat. Fry the schnitzels until golden brown on both sides. Transfer to the oven to keep warm.
- Drain the potatoes and mash them with butter, milk, and lemon juice until smooth.
- Serve the schnitzel with the lemon butter mashed potatoes.
