- 4 large potatoes, peeled and grated
- 1 onion, grated
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying
Instructions
- Grate the potatoes and onion using a box grater or food processor.
- Place the grated potatoes and onion in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine the grated mixture with eggs, flour, salt, and pepper.
- Heat oil in a large skillet over medium heat.
- Drop spoonfuls of the potato mixture into the hot oil and flatten slightly.
- Fry until golden brown on both sides, about 3-4 minutes per side.
- Remove latkes from the skillet and place on paper towels to drain excess oil.
- Serve warm with applesauce or sour cream.
Notes
- Use starchy potatoes like Russets for best results.
- Make sure the oil is hot before adding the latkes.
- You can keep cooked latkes warm in the oven.
