Description

A refreshing ice cream made with the flavors of lavender and Earl Grey tea.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1 tablespoon dried lavender
  • 2 tablespoons Earl Grey tea leaves
  • 1 tablespoon vanilla extract
  • 4 egg yolks

Instructions

  1. In a saucepan, combine cream, milk, and sugar over medium heat.
  2. Add dried lavender and Earl Grey tea leaves. Heat until just simmering.
  3. Remove from heat and let steep for 15 minutes.
  4. Strain the mixture to remove lavender and tea leaves.
  5. In a bowl, whisk egg yolks. Gradually add the warm cream mixture to the yolks.
  6. Return the mixture to the saucepan and cook over low heat until thickened.
  7. Remove from heat and stir in vanilla extract.
  8. Chill the mixture in the refrigerator for at least 4 hours.
  9. Churn in an ice cream maker according to the manufacturer’s instructions.
  10. Transfer to a container and freeze until firm.

Notes

  • Use culinary lavender for best results.
  • Store in an airtight container in the freezer.
  • Let sit at room temperature for a few minutes before serving.
