Description
A refreshing ice cream made with the flavors of lavender and Earl Grey tea.
Ingredients

- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- 1 tablespoon dried lavender
- 2 tablespoons Earl Grey tea leaves
- 1 tablespoon vanilla extract
- 4 egg yolks
Instructions
- In a saucepan, combine cream, milk, and sugar over medium heat.
- Add dried lavender and Earl Grey tea leaves. Heat until just simmering.
- Remove from heat and let steep for 15 minutes.
- Strain the mixture to remove lavender and tea leaves.
- In a bowl, whisk egg yolks. Gradually add the warm cream mixture to the yolks.
- Return the mixture to the saucepan and cook over low heat until thickened.
- Remove from heat and stir in vanilla extract.
- Chill the mixture in the refrigerator for at least 4 hours.
- Churn in an ice cream maker according to the manufacturer’s instructions.
- Transfer to a container and freeze until firm.
Notes
- Use culinary lavender for best results.
- Store in an airtight container in the freezer.
- Let sit at room temperature for a few minutes before serving.
