This lemon blueberry loaf with lemon glaze is a delightful blend of tangy lemon and sweet blueberries.

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 cup buttermilk
- 1 cup fresh blueberries
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice for glaze
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5 inch loaf pan.
- In a bowl, mix flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add eggs, lemon juice, and lemon zest to the butter mixture, and mix well.
- Alternately add flour mixture and buttermilk to the wet ingredients, starting and ending with flour.
- Gently fold in blueberries.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
- For the glaze, mix powdered sugar and lemon juice until smooth and drizzle over the cooled loaf.
Notes
- For best results, use fresh blueberries.
- Let the loaf cool completely before adding glaze.
