Delicious lemon cheesecake bars with a creamy filling and a buttery crust.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- ½ cup sour cream
- ¾ cup lemon juice
- 1 tablespoon lemon zest
Instructions
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a greased baking dish.
- In another bowl, beat cream cheese and sugar until smooth.
- Add eggs, sour cream, lemon juice, and lemon zest. Mix well.
- Pour the filling over the crust.
- Bake for 30-35 minutes until set.
- Cool at room temperature, then refrigerate for at least 2 hours before serving.
Notes
- For a stronger lemon flavor, add more lemon zest.
- Serve chilled for best taste.
- Can be topped with whipped cream or fresh berries.
