Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Combine graham cracker crumbs and melted butter in a bowl.
  3. Press the mixture into the bottom of a greased 9×13 inch baking pan.
  4. Bake the crust for 10 minutes, then remove from the oven.
  5. In a separate bowl, beat the cream cheese and sugar until smooth.
  6. Add eggs one at a time, mixing well after each addition.
  7. Mix in lemon juice, lemon zest, and vanilla extract until fully combined.
