- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 (8 oz) packages cream cheese, softened
- 3 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (163°C).
- Combine graham cracker crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a greased 9×13 inch baking pan.
- Bake the crust for 10 minutes, then remove from the oven.
- In a separate bowl, beat the cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Mix in lemon juice, lemon zest, and vanilla extract until fully combined.
- Pour the cheesecake mixture over the crust.
- Bake for 25-30 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before cutting into bars.
Notes
- For a thicker crust, increase the graham cracker crumbs to 2 cups.
- Top with whipped cream or a lemon glaze for added flavor.
- Variation: Substitute lime juice for lemon juice for a lime cheesecake flavor.
