- 1/4 cup cream cheese, softened
- 1/4 cup butter, softened
- 1 large egg
- 1/4 cup milk
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat cream cheese and butter until smooth.
- Add egg, milk, lemon zest, and lemon juice to the cream cheese mixture. Mix well.
- Combine the wet and dry ingredients until just mixed.
- Pour batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool before slicing.

- Can serve with lemon glaze for extra sweetness.
