Description

A delicious lemon meringue cheesecake that combines the tartness of lemon with the sweetness of meringue.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup sugar

Instructions

  1. Preheat oven to 325°F.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl.
  3. Press mixture into the bottom of a 9-inch springform pan.
  4. In a large bowl, beat cream cheese and 1 cup sugar until smooth.
  5. Add eggs, lemon juice, lemon zest, and vanilla; mix until combined.
  6. Pour cream cheese mixture over crust in the pan.
  7. Bake for 55-60 minutes or until set.
  8. Let cool completely.
  9. In a separate bowl, beat egg whites and cream of tartar until soft peaks form.
  10. Gradually add 1/2 cup sugar, beating until stiff peaks form.
  11. Spread meringue over the cooled cheesecake.
  12. Bake for an additional 10 minutes or until meringue is golden.
  13. Cool and refrigerate for at least 4 hours before serving.
