Description
A delicious lemon meringue cheesecake that combines the tartness of lemon with the sweetness of meringue.

- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon vanilla extract
- 3 egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup sugar
Instructions
- Preheat oven to 325°F.
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl.
- Press mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth.
- Add eggs, lemon juice, lemon zest, and vanilla; mix until combined.
- Pour cream cheese mixture over crust in the pan.
- Bake for 55-60 minutes or until set.
- Let cool completely.
- In a separate bowl, beat egg whites and cream of tartar until soft peaks form.
- Gradually add 1/2 cup sugar, beating until stiff peaks form.
- Spread meringue over the cooled cheesecake.
- Bake for an additional 10 minutes or until meringue is golden.
- Cool and refrigerate for at least 4 hours before serving.
Notes
- Store leftovers in the refrigerator.
- Use fresh lemons for the best flavor.
- Make sure the cheesecake is completely cool before adding meringue.
