A refreshing lemon quinoa chickpea salad packed with nutrients.
Ingredients

- 1 cup quinoa
- 1 can chickpeas, rinsed and drained
- 1 lemon, juiced
- 2 tablespoons olive oil
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup parsley, chopped
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.
- In a large bowl, combine cooked quinoa and chickpeas.
- Add lemon juice and olive oil.
- Mix in cucumber, bell pepper, red onion, and parsley.
- Season with salt and pepper.
- Toss well and serve chilled.
Notes
- Adjust lemon juice to taste.
- Store leftovers in the refrigerator.
- This salad can be made a day in advance.
