Ingredients

  • 1 cup quinoa
  • 1 can chickpeas, rinsed and drained
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. Cook quinoa according to package instructions.
  3. In a large bowl, combine cooked quinoa and chickpeas.
  4. Add lemon juice and olive oil.
  5. Mix in cucumber, bell pepper, red onion, and parsley.
  6. Season with salt and pepper.
  7. Toss well and serve chilled.
