Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/4 cup lime juice
- 1 tablespoon lime zest
- 2 teaspoons unflavored gelatin
- 3 tablespoons cold water
- 1/4 cup granulated sugar
Instructions
- Preheat the oven to 350°F (175°C).
- Mix graham cracker crumbs and melted butter.
- Press the mixture into the bottom of a springform pan.
- Bake for 10 minutes and cool.
- In a bowl, beat cream cheese and powdered sugar until smooth.
- In another bowl, whip heavy cream until stiff peaks form.
- Combine lime juice, zest, and gelatin dissolved in cold water.
- Fold the cream cheese mixture into the whipped cream.
- Slowly add the lime mixture and mix until combined.
- Pour the lime mousse over the cooled crust and refrigerate for at least 4 hours.
