Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1/4 cup lime juice
  • 1 tablespoon lime zest
  • 2 teaspoons unflavored gelatin
  • 3 tablespoons cold water
  • 1/4 cup granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix graham cracker crumbs and melted butter.
  3. Press the mixture into the bottom of a springform pan.
  4. Bake for 10 minutes and cool.
  5. In a bowl, beat cream cheese and powdered sugar until smooth.
  6. In another bowl, whip heavy cream until stiff peaks form.
  7. Combine lime juice, zest, and gelatin dissolved in cold water.
  8. Fold the cream cheese mixture into the whipped cream.
  9. Slowly add the lime mixture and mix until combined.
  10. Pour the lime mousse over the cooled crust and refrigerate for at least 4 hours.
