Description

Linzer cookies are delicious, buttery sandwich cookies filled with fruit jam.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup ground almonds
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs and vanilla, mixing well.
  4. In another bowl, combine flour, ground almonds, cinnamon, and salt.
  5. Gradually add the dry ingredients to the butter mixture.
  6. Chill the dough for 30 minutes.
  7. Roll out the dough on a floured surface to about 1/4 inch thick.
  8. Cut out cookies using a cookie cutter.
  9. Cut a smaller shape in the center of half the cookies.
  10. Bake for 10-12 minutes until lightly golden.
  11. Cool and spread jam on whole cookies, then top with cut-out cookies.
