Delicious loaded mashed potato cakes that are crispy on the outside and creamy on the inside.
Ingredients

- 2 cups mashed potatoes
- 1 cup shredded cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- 1/2 cup breadcrumbs
- 1 egg
- Salt to taste
- Pepper to taste
Instructions
- In a bowl, mix mashed potatoes, cheese, bacon, green onions, egg, salt, and pepper.
- Form the mixture into patties.
- Coat each patty in breadcrumbs.
- Heat oil in a skillet over medium heat.
- Cook the patties for 4-5 minutes on each side until golden brown.
- Remove from skillet and drain on paper towels.
Notes
- Use leftover mashed potatoes for best results.
- Adjust cheese and bacon quantities to your taste.
- Serve with sour cream or your favorite dip.
