  • 1 lb oysters

  • 4 cloves garlic, minced
  • 6 cups seafood stock
  • 2 cups okra, sliced

  • 1 bay leaf
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add flour to the pot and stir constantly to make a roux.
  3. Cook until roux is dark brown, about 20-30 minutes.
  4. Add onion, bell pepper, celery, and garlic to the pot.
  5. Sauté until vegetables are tender.
  6. Add seafood stock, okra, Cajun seasoning, thyme, and bay leaf.
  7. Simmer for 30 minutes.
  8. Add shrimp, crab meat, and oysters.
  9. Cook for an additional 10 minutes until seafood is cooked through.
  10. Season with salt and pepper.
  11. Serve over cooked rice.
