- 1 lb shrimp, peeled and deveined
- 1 lb crab meat
- 1 lb oysters
- 1/2 cup vegetable oil
- 1/2 cup flour
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups seafood stock
- 2 cups okra, sliced
- 2 teaspoons Cajun seasoning
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Heat oil in a large pot over medium heat.
- Add flour to the pot and stir constantly to make a roux.
- Cook until roux is dark brown, about 20-30 minutes.
- Add onion, bell pepper, celery, and garlic to the pot.
- Sauté until vegetables are tender.
- Add seafood stock, okra, Cajun seasoning, thyme, and bay leaf.
- Simmer for 30 minutes.
- Add shrimp, crab meat, and oysters.
- Cook for an additional 10 minutes until seafood is cooked through.
- Season with salt and pepper.
- Serve over cooked rice.
