Ingredients

- 2 chicken breasts, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup Kalamata olives
- 2 cups spinach
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add diced chicken, garlic powder, oregano, salt, and pepper.
- Cook until the chicken is browned and cooked through, about 7-10 minutes.
- In a bowl, combine cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- Add the cooked chicken to the bowl.
- Serve on a bed of spinach.
