- 1 lb chicken breast, diced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup feta cheese, crumbled
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and cook until browned and cooked through.
- Stir in garlic and cook for 1 minute.
- Add chicken broth and bring to a boil.
- Stir in orzo and reduce heat to low. Simmer for 10 minutes or until orzo is tender.
- Mix in heavy cream, spinach, sun-dried tomatoes, and feta cheese. Cook for 2-3 minutes until heated through.
- Season with salt and pepper to taste. Serve warm.
Notes
- You can substitute chicken with shrimp or tofu for a different protein.
