Description

Mediterranean quesadillas with spinach, feta, and mozzarella.


Ingredients

  • 2 tortillas
  • 1 cup fresh spinach
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup mozzarella cheese, shredded
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add spinach and sauté until wilted.
  3. Mix in garlic powder, salt, and pepper.
  4. Place one tortilla in the pan.
  5. Sprinkle half of the mozzarella and feta on the tortilla.
  6. Add the sautéed spinach on top of the cheese.
  7. Sprinkle the remaining mozzarella and feta over the spinach.
  8. Cover with the second tortilla.
  9. Cook until the bottom tortilla is golden brown, then flip and cook the other side.
  10. Remove from heat and cut into wedges.

Notes

  • Serve with yogurt or tzatziki sauce.
  • Can add other vegetables like bell peppers or olives.
