Description
Mediterranean quesadillas with spinach, feta, and mozzarella.
Ingredients

- 2 tortillas
- 1 cup fresh spinach
- 1/2 cup feta cheese, crumbled
- 1/2 cup mozzarella cheese, shredded
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add spinach and sauté until wilted.
- Mix in garlic powder, salt, and pepper.
- Place one tortilla in the pan.
- Sprinkle half of the mozzarella and feta on the tortilla.
- Add the sautéed spinach on top of the cheese.
- Sprinkle the remaining mozzarella and feta over the spinach.
- Cover with the second tortilla.
- Cook until the bottom tortilla is golden brown, then flip and cook the other side.
- Remove from heat and cut into wedges.
Notes
- Serve with yogurt or tzatziki sauce.
- Can add other vegetables like bell peppers or olives.
