Ingredients

- 1 cup brown rice
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 teaspoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in cumin and paprika, cook for 1 minute.
- Add rice, chickpeas, diced tomatoes, and vegetable broth.
- Bring to a boil, then reduce to low heat and cover.
- Cook for 30-35 minutes until rice is tender.
- Fluff with a fork and season with salt and pepper.
- Garnish with fresh parsley before serving.

- Use brown or white rice depending on preference.
- Feel free to add other vegetables like bell peppers or spinach.
