Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 teaspoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in cumin and paprika, cook for 1 minute.
  4. Add rice, chickpeas, diced tomatoes, and vegetable broth.
  5. Bring to a boil, then reduce to low heat and cover.
  6. Cook for 30-35 minutes until rice is tender.
  7. Fluff with a fork and season with salt and pepper.
  8. Garnish with fresh parsley before serving.
