Description

A healthy and flavorful Mediterranean rice bowl.


Ingredients

Scale
  • 1 cup of brown rice
  • 2 cups of water
  • 1 cup of cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup of red onion, chopped
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of olives, sliced
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse the brown rice under cold water.
  2. In a pot, combine rice and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 45 minutes or until rice is tender.
  4. Fluff rice with a fork and let it cool.
  5. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and olives.
  6. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  7. Pour dressing over the vegetable mixture and toss to combine.
  8. Serve the vegetable mixture over the rice.

Notes

  • You can add grilled chicken or chickpeas for protein.
  • Use quinoa instead of rice for a different texture.
  • Store leftovers in an airtight container in the fridge.
