Description
A healthy and flavorful Mediterranean rice bowl.
Ingredients
Scale
- 1 cup of brown rice
- 2 cups of water
- 1 cup of cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup of red onion, chopped
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of olives, sliced
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions
- Rinse the brown rice under cold water.
- In a pot, combine rice and water. Bring to a boil.
- Reduce heat, cover, and simmer for 45 minutes or until rice is tender.
- Fluff rice with a fork and let it cool.
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and olives.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour dressing over the vegetable mixture and toss to combine.
- Serve the vegetable mixture over the rice.
Notes
- You can add grilled chicken or chickpeas for protein.
- Use quinoa instead of rice for a different texture.
- Store leftovers in an airtight container in the fridge.
