A refreshing Mediterranean shrimp and avocado salad.
Ingredients

- 1 pound shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a skillet, heat olive oil over medium heat.
- Add shrimp and cook until pink, about 3-4 minutes.
- In a large bowl, combine avocado, cherry tomatoes, cucumber, red onion, and parsley.
- Add cooked shrimp to the bowl.
- Drizzle with lemon juice and season with salt and pepper.
- Toss gently to combine.
- Serve immediately or chill in the fridge for 30 minutes.
