Description

Ingredients

  • 4 medium zucchinis
  • 1 cup cherry tomatoes, diced
  • 1 cup bell pepper, diced
  • 1 cup onion, diced
  • 1 cup feta cheese, crumbled
  • 1/2 cup olives, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchinis in half lengthwise and scoop out the insides.
  3. In a pan, heat olive oil and sauté onion and garlic until fragrant.
  4. Add bell pepper and cherry tomatoes, cooking until softened.
  5. Stir in zucchini flesh, olives, oregano, salt, and pepper.
  6. Remove from heat and mix in feta cheese.
  7. Fill zucchini halves with the mixture.
  8. Place stuffed zucchinis on a baking dish and bake for 25-30 minutes.
  9. Serve warm.
