- 4 medium zucchinis
- 1 cup cherry tomatoes, diced
- 1 cup bell pepper, diced
- 1 cup onion, diced
- 1 cup feta cheese, crumbled
- 1/2 cup olives, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice zucchinis in half lengthwise and scoop out the insides.
- In a pan, heat olive oil and sauté onion and garlic until fragrant.
- Add bell pepper and cherry tomatoes, cooking until softened.
- Stir in zucchini flesh, olives, oregano, salt, and pepper.
- Remove from heat and mix in feta cheese.
- Fill zucchini halves with the mixture.
- Place stuffed zucchinis on a baking dish and bake for 25-30 minutes.
- Serve warm.

- You can substitute feta with ricotta for a creamier filling.
