Ingredients

  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 2 eggs
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix cornbread mix, eggs, and milk.
  3. Add black beans, corn, salsa, bell pepper, onion, and half of the cheese to the mixture.
  4. Pour the mixture into a greased baking dish.
  5. Top with remaining cheese.
  6. Bake for 25-30 minutes or until golden brown.
  7. Let it cool for a few minutes before serving.
