A hearty and flavorful Mexican cornbread casserole that combines cornbread, beans, and spices.

- 1 package cornbread mix
- 1 can black beans, drained
- 1 can corn, drained
- 1 cup salsa
- 1 cup shredded cheese
- 1/2 cup diced bell pepper
- 1/2 cup diced onion
- 2 eggs
- 1/2 cup milk
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix cornbread mix, eggs, and milk.
- Add black beans, corn, salsa, bell pepper, onion, and half of the cheese to the mixture.
- Pour the mixture into a greased baking dish.
- Top with remaining cheese.
- Bake for 25-30 minutes or until golden brown.
- Let it cool for a few minutes before serving.
Notes
- Serve with sour cream or avocado on top.
- Can be made ahead and reheated.
