Ingredients

  • 1 cup tomato juice
  • 1/2 cup diced cucumber
  • 1/2 cup diced avocado
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño, finely chopped
  • Juice of 2 limes
  • Salt to taste

Instructions

  1. Boil shrimp in salted water until pink, about 2-3 minutes.
  2. Drain and cool shrimp before chopping into bite-sized pieces.
  3. In a bowl, combine tomato juice, cucumber, avocado, onion, cilantro, jalapeño, and lime juice.
  4. Add shrimp to the mixture and stir gently.
  5. Season with salt to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.
