A refreshing Mexican shrimp cocktail with a zesty twist.
Ingredients

- 1 lb shrimp, peeled and deveined
- 1 cup tomato juice
- 1/2 cup diced cucumber
- 1/2 cup diced avocado
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 jalapeño, finely chopped
- Juice of 2 limes
- Salt to taste
Instructions
- Boil shrimp in salted water until pink, about 2-3 minutes.
- Drain and cool shrimp before chopping into bite-sized pieces.
- In a bowl, combine tomato juice, cucumber, avocado, onion, cilantro, jalapeño, and lime juice.
- Add shrimp to the mixture and stir gently.
- Season with salt to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Can be served with tortilla chips.
- Adjust spiciness by adding more or less jalapeño.
- Best served fresh.
