- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup crumbled Cotija cheese
- 1 teaspoon chili powder
- 1 lime, juiced
- Fresh cilantro, chopped
Instructions
- Preheat the grill to medium-high heat.
- Grill the corn for about 10-15 minutes, turning occasionally, until charred.
- In a bowl, mix mayonnaise, sour cream, lime juice, chili powder, and half of the Cotija cheese.
- Remove corn from the grill and let it cool slightly.
- Spread the mayonnaise mixture over the grilled corn.
- Top with remaining Cotija cheese and chopped cilantro.
- Serve immediately with lime wedges.
