Ingredients

- 3 cups cooked turkey, shredded
- 2 cups mole sauce
- 1 cup corn tortillas, cut into strips
- 1 cup cheese, grated
- 1/2 cup sour cream
- 1/4 cup cilantro, chopped
- 1 teaspoon cumin
- 1 teaspoon garlic powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a baking dish, layer half of the tortillas at the bottom.
- Add half of the shredded turkey on top of the tortillas.
- Pour half of the mole sauce over the turkey.
- Sprinkle half of the cheese on top.
- Repeat the layers with the remaining tortillas, turkey, mole sauce, and cheese.
- Bake for 25 minutes until bubbly.
- Serve with sour cream and cilantro on top.
Notes
- Adjust the spice level of the mole sauce to your preference.
- Use leftover turkey for best results.
- Can substitute chicken for turkey if desired.
