Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a baking dish, layer half of the tortillas at the bottom.
  3. Add half of the shredded turkey on top of the tortillas.
  4. Pour half of the mole sauce over the turkey.
  5. Sprinkle half of the cheese on top.
  6. Repeat the layers with the remaining tortillas, turkey, mole sauce, and cheese.
  7. Bake for 25 minutes until bubbly.
  8. Serve with sour cream and cilantro on top.

Notes

  • Adjust the spice level of the mole sauce to your preference.
  • Use leftover turkey for best results.
  • Can substitute chicken for turkey if desired.
