- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup finely chopped pecans
- 1/4 teaspoon salt
- 1/2 cup powdered sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream the butter and sugar until light.
- Add vanilla extract and mix well.
- Gradually add flour, salt, and nuts. Mix until combined.
- Shape the dough into small balls and place on a baking sheet.
- Bake for 10-12 minutes until lightly golden.
- Roll cookies in powdered sugar while warm.
- Let cool and roll in powdered sugar again before serving.

- Can substitute walnuts for pecans if desired.
