Ingredients

  • 200g mixed dried fruit
  • 100g unsalted butter
  • 100g brown sugar
  • 2 large eggs
  • 150g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 50g chopped nuts
  • 100g marzipan
  • 100g icing sugar

Instructions

  1. Preheat your oven to 150°C (300°F).
  2. In a saucepan, melt the butter and sugar together.
  3. In a bowl, mix eggs and add the melted butter mixture.
  4. Combine flour, baking powder, cinnamon, and nutmeg in another bowl.
  5. Add the dry ingredients to the wet ingredients and mix well.
  6. Stir in the mixed dried fruit and nuts.
  7. Pour the batter into mini cake tins.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let them cool, then cover with marzipan and icing sugar.
