Description
Mini empanadas filled with a savory mixture of beef, spices, and olives.
Ingredients

- 1 cup all-purpose flour
- 1/4 cup unsalted butter, cold and cubed
- 1/4 tsp salt
- 3–4 tbsp cold water
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup green olives, chopped
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp black pepper
- 1 egg, beaten (for egg wash)
Instructions
- In a bowl, combine flour and salt. Add cold butter and mix until crumbly.
- Gradually add cold water and mix until dough forms. Chill for 30 minutes.
- In a pan, sauté onions and garlic until translucent.
- Add ground beef, cumin, paprika, and black pepper. Cook until beef is browned.
- Stir in olives and remove from heat. Let cool.
- Roll out dough and cut into circles.
- Place a spoonful of filling in the center of each circle.
- Fold and seal edges tightly. Brush with egg wash.
- Bake at 375°F for 20-25 minutes or until golden brown.
Notes
- Experiment with different fillings like chicken or vegetables.
- Serve with chimichurri for added flavor.
- Garnish with fresh herbs for a pop of color.
