Ingredients

- 1 package of pie crusts
- 2 cups of pumpkin puree
- 1 cup of sugar
- 1 teaspoon of cinnamon
- 1/2 teaspoon of nutmeg
- 1/2 teaspoon of ginger
- 1/4 teaspoon of salt
- 3 large eggs
- 1 cup of evaporated milk
Instructions
- Preheat the oven to 425°F (220°C).
- Roll out the pie crusts and cut them into small circles.
- Place the circles into mini pie pans.
- In a bowl, mix pumpkin puree, sugar, spices, salt, eggs, and evaporated milk.
- Pour the filling into the mini crusts.
- Bake for 15-20 minutes or until the filling is set.
- Let the mini pies cool before serving.

- Serve with whipped cream for extra flavor.
