Description
Mini strawberry cheesecakes are a delicious dessert made with a creamy cheesecake filling and fresh strawberries on a graham cracker crust.

- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 cup fresh strawberries, sliced
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom of muffin tins.
- In another bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add sour cream and mix until well combined.
- Pour the cheesecake filling over the crusts in the muffin tins.
- Bake for 15-20 minutes until set.
- Allow to cool, then top with sliced strawberries.
- Refrigerate for at least 2 hours before serving.
Notes
- These cheesecakes can be made ahead of time.
- Use fresh strawberries for best flavor.
- Store leftovers in the refrigerator.
