Description
Classic rice pudding made the traditional way.
Ingredients
Scale
- 1 cup rice
- 4 cups milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 2 eggs, beaten
- 1/2 cup raisins (optional)
Instructions
- Rinse the rice under cold water.
- In a pot, combine rice, milk, sugar, and salt. Bring to a boil.
- Reduce heat and simmer until rice is tender.
- In a bowl, mix eggs and vanilla extract.
- Slowly add a little of the hot rice mixture to the eggs to temper them.
- Stir the tempered eggs back into the rice mixture.
- Cook for a few more minutes until thickened.
- Remove from heat and stir in cinnamon and raisins if using.
- Let cool before serving.
Notes
- Can be served warm or chilled.
- Add more milk for a creamier texture.
- Store leftovers in the refrigerator.
