Description

Classic rice pudding made the traditional way.


Ingredients

Scale
  • 1 cup rice
  • 4 cups milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 2 eggs, beaten
  • 1/2 cup raisins (optional)

Instructions

  1. Rinse the rice under cold water.
  2. In a pot, combine rice, milk, sugar, and salt. Bring to a boil.
  3. Reduce heat and simmer until rice is tender.
  4. In a bowl, mix eggs and vanilla extract.
  5. Slowly add a little of the hot rice mixture to the eggs to temper them.
  6. Stir the tempered eggs back into the rice mixture.
  7. Cook for a few more minutes until thickened.
  8. Remove from heat and stir in cinnamon and raisins if using.
  9. Let cool before serving.

Notes

  • Can be served warm or chilled.
  • Add more milk for a creamier texture.
  • Store leftovers in the refrigerator.
