A festive and delicious dinner to celebrate New Year’s Day.
Ingredients

- 2 lbs of beef roast
- 1 cup of carrots, chopped
- 1 cup of potatoes, diced
- 1 onion, sliced
- 2 cups of beef broth
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Season the beef roast with salt and pepper.
- In a large skillet, heat olive oil over medium heat and sear the roast on all sides.
- Place the roast in a baking dish and surround it with carrots, potatoes, and onion.
- Pour beef broth over the roast and add minced garlic.
- Cover the dish with foil and bake for 2 hours.
- Remove the foil and bake for an additional 30 minutes for a crispy finish.
- Let the roast rest for 10 minutes before slicing. Serve warm.
Notes
- Adjust seasoning according to your preference.
- Feel free to add other vegetables.
- Leftovers can be used for sandwiches.
