Instructions

  2. Season the beef roast with salt and pepper.
  3. In a large skillet, heat olive oil over medium heat and sear the roast on all sides.
  4. Place the roast in a baking dish and surround it with carrots, potatoes, and onion.
  5. Pour beef broth over the roast and add minced garlic.
  6. Cover the dish with foil and bake for 2 hours.
  7. Remove the foil and bake for an additional 30 minutes for a crispy finish.
  8. Let the roast rest for 10 minutes before slicing. Serve warm.
