A festive dish perfect for New Year’s Day celebrations.
Ingredients

- 2 cups of rice
- 1 cup of black-eyed peas
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, chopped
- 4 cups of vegetable broth
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 tablespoon of olive oil
- 1 teaspoon of paprika
Instructions
- Rinse the rice and black-eyed peas under cold water.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, and bell pepper. Sauté until soft.
- Add rice and stir for 2 minutes.
- Pour in vegetable broth and add black-eyed peas.
- Season with salt, black pepper, and paprika.
- Bring to a boil, then reduce heat and cover.
- Cook for 20 minutes or until rice is tender.
- Fluff with a fork and serve hot.
Notes
- You can add other vegetables if desired.
- Adjust spices to taste.
- Serve with cornbread for a complete meal.
