Ingredients

Instructions
- Rinse the rice under cold water.
- In a large pot, cook sausage over medium heat until browned.
- Add onion and garlic; sauté until soft.
- Add collard greens and cook until wilted.
- Stir in black-eyed peas, rice, and chicken broth.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and cover.
- Simmer for 20-25 minutes until rice is tender.
- Fluff with a fork and serve hot.
Notes
- Use vegetable broth for a vegetarian option.
- Feel free to add other vegetables to the dish.
