Ingredients

  • 2 cups of quinoa
  • 4 cups of vegetable broth
  • 1 cup of cherry tomatoes, halved
  • 1 cup of cucumber, diced
  • 1/2 cup of red onion, chopped
  • 1/4 cup of parsley, chopped
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa, cover, and reduce heat. Simmer for 15 minutes.
  4. Remove from heat and let sit for 5 minutes.
  5. Fluff quinoa with a fork and let cool.
  6. In a large bowl, combine cherry tomatoes, cucumber, red onion, and parsley.
  7. Add cooled quinoa to the bowl.
  8. Drizzle with olive oil and lemon juice.
  9. Season with salt and pepper.
  10. Toss everything together and serve chilled.
