- 2 lbs beef roast
- 1 cup red wine
- 4 cloves garlic, minced
- 1 tablespoon rosemary, chopped
- 1 tablespoon thyme, chopped
- 2 cups vegetables (carrots, potatoes, onions)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Season the beef roast with salt, pepper, garlic, rosemary, and thyme.
- In a large pot, sear the beef on all sides over medium heat.
- Add red wine and vegetables to the pot.
- Cover and transfer the pot to the oven.
- Cook for 2 hours or until the beef is tender.
- Let it rest before slicing.
