Ingredients

- 200g soba noodles
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 carrot, julienned
- 1 cucumber, julienned
- 100g shiitake mushrooms, sliced
- 2 green onions, chopped
- 1 tablespoon sesame seeds
- 1 teaspoon ginger, grated
- 1 garlic clove, minced
Instructions
- Cook soba noodles according to package instructions.
- Drain and rinse under cold water.
- In a pan, heat sesame oil and sauté garlic and ginger for 1 minute.
- Add carrots, cucumbers, and mushrooms; cook for 3-4 minutes.
- Toss in the cooked soba noodles and soy sauce; mix well.
- Garnish with green onions and sesame seeds.
