Description

Ingredients

- 1 cup black-eyed peas
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 green bell pepper, chopped
- 4 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons olive oil
Instructions
- Soak black-eyed peas overnight.
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, and green bell pepper. Sauté until soft.
- Add soaked black-eyed peas and broth.
- Season with salt, pepper, and paprika.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Serve hot.
