Ingredients

- 2 cups of black-eyed peas
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, chopped
- 4 cups of vegetable broth
- 1 teaspoon of thyme
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- Rinse the black-eyed peas and soak them overnight.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, and bell pepper. Sauté until soft.
- Add soaked black-eyed peas and vegetable broth.
- Add thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Check for tenderness and adjust seasoning if needed.
- Serve hot.
Notes
- You can add diced ham for extra flavor.
- Serve with cornbread for a traditional touch.
- Store leftovers in the refrigerator for up to 3 days.
