A delicious spread of traditional and modern dishes to celebrate New Year’s Day.
Ingredients

- 2 cups of black-eyed peas
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 tsp of cumin
- 4 cups of vegetable broth
- Salt and pepper to taste
- 1 bunch of collard greens, chopped
- 1 tbsp of olive oil
- 1 loaf of cornbread
Instructions
- Rinse the black-eyed peas and soak overnight.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, and bell pepper, and sauté until soft.
- Add black-eyed peas, vegetable broth, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Add collard greens and cook for an additional 15 minutes.
- Serve hot with cornbread on the side.
Notes
- Feel free to add smoked sausage for extra flavor.
- Adjust spices according to your taste.
- Store leftovers in the refrigerator for up to three days.
