Description

A delicious spread of traditional and modern dishes to celebrate New Year’s Day.


Ingredients

  • 2 cups of black-eyed peas
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 tsp of cumin
  • 4 cups of vegetable broth
  • Salt and pepper to taste
  • 1 bunch of collard greens, chopped
  • 1 tbsp of olive oil
  • 1 loaf of cornbread

Instructions

  1. Rinse the black-eyed peas and soak overnight.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion, garlic, and bell pepper, and sauté until soft.
  4. Add black-eyed peas, vegetable broth, cumin, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes.
  6. Add collard greens and cook for an additional 15 minutes.
  7. Serve hot with cornbread on the side.

Notes

  • Feel free to add smoked sausage for extra flavor.
  • Adjust spices according to your taste.
  • Store leftovers in the refrigerator for up to three days.
