Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the chicken and pat it dry.
- Rub the chicken with olive oil, salt, and pepper.
- Stuff the cavity with garlic, lemon slices, and rosemary.
- Place the chicken in a roasting pan and surround it with mixed vegetables.
- Roast in the oven for 1.5 hours, or until the chicken reaches an internal temperature of 165°F (74°C).
- Let it rest for 10 minutes before carving.
