Instructions

  1. Rinse the rice under cold water.
  2. Heat olive oil in a pan over medium heat.
  3. Sauté onion and garlic until soft.
  4. Add bell pepper and mixed vegetables; cook for 5 minutes.
  5. Add rice, broth, salt, and pepper.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 20 minutes.
  8. Remove from heat and let it sit for 5 minutes.
  9. Fluff with a fork and stir in soy sauce.
