- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 lemon, halved
- 4 garlic cloves, minced
- Fresh herbs (rosemary, thyme)
- Vegetables (carrots, potatoes, onions) for roasting
Instructions
- Preheat oven to 375°F (190°C).
- Pat the chicken dry and place it in a roasting pan.
- Rub olive oil, salt, and pepper all over the chicken.
- Stuff the cavity with lemon halves, garlic, and herbs.
- Arrange vegetables around the chicken in the pan.
- Roast for about 1.5 hours or until the chicken reaches 165°F (75°C).
- Let it rest for 10-15 minutes before carving.
- Serve with your favorite sides.
