Instructions

  3. Place the roast in a roasting pan.
  4. Roast for 20 minutes, then reduce the temperature to 325°F (165°C).
  5. Add vegetables around the roast.
  6. Pour red wine into the pan.
  7. Continue roasting until the desired doneness is reached (about 1.5 hours for medium rare).
  8. Rest the roast for 15 minutes before slicing.
  9. Serve with roasted vegetables.
