Ingredients

  • 4 cloves garlic, minced
  • 1 tablespoon rosemary, chopped
  • 1 tablespoon thyme, chopped
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 cup red wine
  • 1 lb asparagus, trimmed
  • 1 lb mashed potatoes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the beef tenderloin with salt, pepper, garlic, rosemary, and thyme.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Sear the beef on all sides until browned.
  5. Transfer the beef to the oven and roast for 25-30 minutes for medium-rare.
  6. In the same skillet, add red wine and reduce by half.
  7. Cook the asparagus in boiling water for 3-4 minutes.
  8. Serve the beef with mashed potatoes and asparagus, drizzled with wine reduction.
